One Pot Creamy Chicken and Rice

I love one pot meals that turn out well (some end up a mushy mess!). This is a good one and my household of men love it.

One Pot Creamy Chicken (i heart naptime)

Ingredients:

2 tablespoons olive oil

1 1/2 pounds boneless, skinless chicken breasts or thighs

1 cup onion, diced

1 cup carrot, diced

1 cup celery, diced

1 teaspoon garlic, minced

1 1/2 cups rice, uncooked

3 cups chicken broth or stock

salt and pepper to taste

1/2 cup parmesan cheese, grated or shredded

1/3 cup fresh parsley, chopped

Directions:

In a large pan (I used this pan), heat olive oil over medium-high heat.

Place chicken pieces (do not overcrowd) in heated oil. Add plenty of salt and pepper. Allow chicken to cook undisturbed, without stirring it, for several minutes.

Add diced onion and garlic to the chicken and saute for 3 minutes. (Don’t worry about the chicken not being done as it will continue to cook throughout preparation.)

Add the carrots and celery to the chicken.

Increase the heat to high and add chicken broth, then stir in the rice. Bring to a boil, then reduce heat to low, Stir again and then cover and let simmer for 15 to 20 minutes or until the rice is cooked, stirring occasionally.

Sir in the parmesan cheese and fresh chopped parsley,

Add more salt and pepper to taste.
