I have been making this dressing for many, many years. I love it especially on tri-color pasta salad with chopped fresh vegetables. You can also use it as a marinade for chicken.
It’s basically a mustard vinegarette that a friends husband concocted. His name was Dean and can you guess what his profession was? ; )
Dr. Dean’s Famous Dressing
7 ounces Canola oil
1/4 cup apple cider vinegar
2 tablespoons Zatarain’s Creole mustard (if your grocery store doesn’t have it use any coarse ground like this one)
2 tablespoons turbinado sugar or sweetener of choice
Emulsify all ingredients together in a blender and refrigerate until chilled.
