While I like extravagant desserts, the simple pleasures of a Blackberry cobbler, or a Coconut Cream pie, heck even a Reeses candy bar, make me every bit as happy!

This recipe for brownies, warm out of the oven, with a good quality vanilla ice cream is one of those simple desserts that is so good. Yum! Just remember to sift all your dry ingredients and the end product will be light and will taste so much better.




  • 1/2 cup butter, melted
  • 1 cup turbinado sugar
  • 2 eggs, beaten in a small cup
  • 1/2 cup whole wheat flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)


  1. Preheat oven to 350 degrees. Grease and flour an 8 X 8 pan.
  2. Sift sugar into a medium bowl. Add the melted butter. Mix well with a large wooden spoon.
  3. Add eggs, and mix well.
  4. Sift the flour, baking powder, salt and cocoa into a separate bowl. Whisk until combined.
  5. Gradually stir into the sugar mixture.
  6. Add vanilla, and walnuts, if using. Stir well.
  7. Spread evenly into your prepared pan. Bake 25-30 minutes or until edges are firm.
  8. Cool somewhat before cutting. Serve warm with vanilla ice cream.
